Carrot Ginger Soup


Soup is the perfect meal as you begin to transition from the last days of Summer to the cool crisp Fall. Soups are easy to make ahead on the weekend for a simple homemade meal on a busy weekday. They fare well in a slow cooker and can quickly be grabbed from the freezer for last minute hearty meals in a hurry!

This a very tasty, easy to make fall soup. Pair it up with some 7 grain crusty rolls or a side of greens and you have a delicious meal.

2 Tbsp grapeseed oil
1 onion, chopped
1 Tbsp grated fresh ginger
4 cups chopped carrots
1/4 cup rolled oats
1/2 cup orange juice
Water or vegetable stock
3 Tbsp mellow white miso
Chopped parsley and a dash of red pepper for garnish (if desired)

Sauté onion, ginger and oil In a large stock pot for about 3 minutes. Add carrots, oats, orange juice and enough water or stock to just cove the carrots. Bring to a boil, reduce heat, cover and let simmer until the carrots are soft. (About 20 minutes). Turn off the heat and purée wit a hand held blender. In a small bowl dissolve miso in 1/2 cup of room-temperature water and then stir into soup.
