Spicy Quinoa Stuffed Avocados

Avocados are one of my favorites. They add creamy texture to salads, sandwiches and  more. When selecting an avocado choose firmer ones if you are not eating them right away and softer ones if you plan on eating them soon, as the softest ones are the most ripe. This is a nutritious recipe, filled with clean, whole foods that not only tastes delicious but has beautiful color and will surely delight the palate!

Start with halving one avocado per person.

Use 1/2 cup of quinoa,
1 can of black beans
1/2 red bell pepper (chopped)
1/2 cup of corn
1/2 red onion
1/4 cup of cilantro and some for garnish
1 cup of cashews
1 tsp apple cider vinegar
1 tsp agave nectar
2 Tbsp cilantro
Sour cream for topping off

Cook quinoa according to instructions. In a medium sized pan sauté red bell pepper, cashews, cilantro and onion, about 3-5 minutes. Add cooked quinoa to pan. Mix in corn, black beans, and agave. Fill halved avocados and garnish with cilantro and sour cream if desired.
